Christmas Comes But Once a Year!

Does anyone remember this cartoon? I remember watching it with my best friend from kindergarten and her sister (hi Lynn and Anne!) and thinking it was so hysterical! We would hop around singing in those little, funny cartoon voices.  Every holiday season I sing this song at least once in my head and smile.  In all the craziness of this season, sometimes it’s nice just to sing tra la la la la!

Last year, my boys and I made “Healthy Fudge” to give out to all of our friends, teachers, neighbors, and anyone else who crossed our path!  It does seem that homemade gifts make a special impact.  This year we are making it again, and packaging it in these cute little containers I found at Target for one dollar! I will make custom labels with the ingredients and a special holiday note from us.  My decals are a fun way to personalize a gift!

Here is our healthy fudge recipe that my friend Julia helped me create inspired from a recipe by Elana’s Pantry. Both Julia and Elana are Boulder locals who are amazing gluten free chefs!  Since my younger one shows signs of asthma, we are going easy on the gluten and dairy in our house these days.  Another reason I love this recipe is because it is high in protein and the “good fats” so I don’t feel so guilty when my kids eat lots of it!

“Healthy Fudge”

1 cup of raw cacao powder

½ cup of coconut oil

½ cup of cashew butter

½ cup macademia nut butter

1 cup agave nectar

1 tablespoon vanilla extract

¼ teaspoon celtic sea salt

¼ teaspoon of cinnamon

Mix together, pour into a baking pan, refrigerate or freeze. When hardened, cut into squares. Package with wax paper between the layers and be sure to tell recipients to refrigerate as fudge will soften at room temp!  Enjoy!
